Abstract:
β-fructofuranosidase is a commonly used enzyme in the food industry. Commonly known as invertase, this enzyme catalyzes the hydrolysis of sucrose into its monomer units of glucose and fructose. In this paper, the purification of this enzyme was attempted through an aqueous two phase extraction method. Due to unforeseen circumstances, the experiment was left unfinished; however, analysis of our results show potential for a successful isolation and purification of the dimer subunits of invertase.
