Abstract:
Isolation and purification of papain from Mexican papaya latex was performed in a novel aqueous two-phase system and studied. The system was composed of PEG(6000) ammonium sulfate (NH4(SO)4) and water. In this system, the top phase contained PGE(6000) and bottom phase NH4(SO)4. The purity of papain obtained from two-phase system was evaluated by ion-exchange chromatography and SDS-Page followed by Bradford assay to determine the protein content of product.
