Abstract:
In this project the goal is to extract the enzyme capsaicin synthase from the species Capsicum Chinese, "habenero". The purification will be done using a series of isolation techniques such as salting, size exclusion chromatography and affinity chromatography. The characterization of the enzyme will be done using an assay specfic to pur enzyme. The end goal is to show purfication and kinetics of the enzyme.
